Chia Seed Pudding

“What are those little bits?”


“Why are they all swollen up like that?”

“They absorb the liquid. It’s a healthy thing. Just eat it already.”




  • 2 cups coconut milk
  • 1/2 cup chia seed
  • 1 tbsp natural honey
  • 1/4 tsp vanilla extract
  • protein powder (optional)


  1. Combine all ingredients in bowl
  2. Stir vigorously until mixed
  3. Chill for at least one hour (3 – 4 preferred)
  4. Remove from fridge and garnish with pretty much any other healthy thing
